Today I made Oatmeal, Coconut and Honey Cookies. I followed a recipe that caught my attention in the blog Recipes on the Net but I changed some ingredients. They are a spectacle!
Ingredients:
- 125g Flour
- 150 g Brown Sugar
- 200g grated Coconut
- 200g of whole Oats
- 100g unsalted Butter
- 3 tbl. sp. of Honey
- 2 eggs
- 2 tbl. sp. milk soup
- 1 tbl. sp. lemon zest
- 75g Walnuts
- 75g Almonds not peeled
- 1 tea sp. Cinnamon
Preparation:
Grind the almonds and walnuts and then mix all the dry ingredients.
Melt the butter with the honey in the microwave for a few seconds, then add the milk. Join to the solid mixture and stir.
Break the eggs, stir them with a fork and add them too. Stir the entire mixture well with your hands.
Mold the cookies and place on a tray lined with parchment paper or silicone mat.
Return to oven preheated to 180 ° C for 20 minutes. Halfway through cooking, flatten the cookies with the back of a tablespoon.
Let it cool and store in a closed box or wrap for Christmas baskets!
